The Molcajete is essential to any kitchen. Use it to release flavor, aromatic oils and juices of just about any veggie, herb or spice.
You’ll be amazed at how much juice is released from onions, bell peppers and garlic. I’ve been using my Molcajete to make tomato sauce without the hassle of blanching tomatoes and removing the skins. Or to quickly infuse tomatoes, guacamole, curry or the like with the bright taste of crushed onions and garlic.
Make incredible rubs for fish and meat
Start with crushing your favorite spices and herbs, add some garlic and onions. Mash it all into a flavorful paste and spread over meat or fish.
Create pastes of all varieties
Make bean pastes, chunky hummus, and more!
A terrific tool for breaking down the cell walls of raw vegetables for smoother digestion
I used to knead kale with my hands. It was a tough job, I didn’t love the texture on my hands and took a lot longer than using the Molcajete. By de facto you’re getting the same effect when crushing onions, garlic, tomatoes, etc. Any pre-digestive process like blending or crushing will ease digestion of raw vegetables.
Grind spices with ease
I often cook with whole spices like Cardamom, Coriander, and Fenugreek. Because they’re round and have a hard outer shell, they can be especially challenging to crush with my other mortar + pestle sets – they jump out of my mortar like fleas! But with the Molcajete it’s a job well done in just a minute. No wily jumping spices, while dish enhancing aromatics are fully released.
Make authentic, full flavored guacamole
By first grinding down garlic, onions, and even some bell pepper, the juices infuse every bite of avocado and yield a guacamole that’s simply bursting with flavor. As a bonus the Molcajete doubles as a fun vessel for presentation. Get the full recipe here>
Seasoning your Molcajete
I simply followed the easy instructions that came with mine. It wasn’t too time consuming and it’s been working great with only seasoning by grinding down onions and garlic, then letting the mixture sit for 24 hours, followed by adding some oil and baking it at 400F for 30 minutes. You can take the process further by grinding it down some more using rice, corn and beans until it’s smooth if you wish.
Don’t be deterred! This is a tool well worth seasoning. I promise you’ll love it as much as I do.
